CHILLY CHICKEN



Ingredients:

500 g boneless chicken, cut into bite-sized pieces
Marinade:
2 tsp ginger-garlic paste
1 tsp green chili paste (optional)
1 egg                        
Pinch of white pepper powder
Pinch of Ajinomoto (optional)
1 tsp dark soya sauce

Other Ingredients:

2 onions, cubed
1 capsicum, cubed
6 green chilies cut
2 tbsp garlic, chopped fine
1 tsp dark soya sauce
2-3 tbsp arrowroot powder
2 tbsp refined flour
Salt to taste
Pinch of white pepper powder
Pinch each of Oregano and Paprika
Pinch of Ajinomoto (optional)
Fortune Rice Bran Health Oil for frying


Method:

1.       Wash and clean chicken.  Marinate pieces in marinade and refrigerate for 4-5 hours, mixing over 2-3 times in between.
2.       To the chicken, add arrowroot powder, refined flour, salt and mix well.
3.       Heat Fortune Rice Bran Health oil in a kadai and when almost hot put in the chicken pieces and deep fry on medium flame so that it is well cooked to a light golden brown color.  Drain and set aside.
4.       In a shallow non-stick pan, heat 1 tbsp Fortune Rice Bran Health Oil.  Add the garlic and onions and sauté for a minute on high flame. 
5.       Add the capsicum, green chilies, soya sauce, salt, white pepper powder, paprika, oregano and stir fry for a minute on high flame. Add the fried chicken pieces and toss. Stir and serve hot.
